A good plate of La Zi Ji must consist of two crucial ingredients, they are Sichuan peppercorn and dried Sichuan Chili peppers. This chicken dish is stir-fry to deliver really intense spiciness with a complex pleasant aroma to your palate.

Sichuan La Zi Ji Chicken Recipe

Make sure to use Sichuan Peppercorn that will give this dish an interesting flavor. You can substitute the dried chili pepper with your local dried chili.

Ingredients

To Marinate Chicken

  • 600 g Chicken or half a chicken
  • 1 tbsp Soy Sauce
  • 1 tsp All Spice Powder
  • 1 tsp Salt
  • 1 tsp White Pepper Powder
  • 1 tbsp Cooking Oil

To Stir Fry

  • 100 g Ginger
  • 1 head Garlic
  • 200 g Scallion
  • 1 head Onion red
  • 2 tbsp Sichuan Peppercorn
  • 2 pcs Bay Leaf
  • 2 pcs Star Anise
  • 1 tsp Fennel Seeds
  • 1 handful Dried Chili adjust amount to personal preferences
  • 2 tbsp Spicy Broad Bean Sauce Chili Dou Ban Sauce
  • 1 tsp Salt
  • 10 tbsp Cooking Oil

Instructions

To Marinate Chicken

  • Clean the chopped chicken and pat dry with a paper towel.
  • Put the chicken into the mixing bowl and add all the ingredients in.
  • Using your hand, mix well, and set aside.

Preparations

  • Slice ginger, crush garlic, cut scallion into bite-size and cut dried chili into half.
  • Prepare the rest of the ingredients accordingly.

To Stir-Fry Chicken

  • Preheat a pan with cooking oil. Then individually fry all the dry spices and strain aside.
  • With the oil still in the cooking pan/wok, switch to medium heat, and add marinated chicken in to sear. Sear to crips edges.
  • Move the chicken to one side of the cooking pan/wok and add sliced ginger and crushed garlic.
  • Thoroughly pan-fry ginger and garlic to aromatic fragrance.
  • Then move fried ginger and garlic to another corner of the cooking pan/wok.
  • Add Spicy Broad Bean Sauce to the oil area and thoroughly fry it.
  • Mix ginger, garlic, and seared chicken together and thoroughly stir fry.
  • Add all the other ingredients and stir fry with high heat until dry. Serve

    • Erm, usually it is at the dried herbs and spices rack. Or perhaps try a Chinese grocery shop, they should have it.

      If you still couldn’t find it, simply replace with a light dash of star anise powder and cumin powder. (Additional option is cloves powder and cinnamon powder)
